Turkey Taco Salad

Serves 5 | 
Southwest inspired and wonderfully flavorful.

Ingredients:

1 tablespoon olive oil
1 white onion, diced
2 lb ground turkey
1 can black beans, drained and rinsed, 15 oz.
1/4 cup chopped cilantro
2/3 cup taco seasoning
2/3 cup water
4 cups chopped romaine lettuce
Avocado slices, for garnish
Chopped green onions, for garnish
Shredded Monterey Jack cheese, for garnish

Directions:

  1. Pour the olive oil into a skillet. Bring to medium heat. Once hot, add the white onion. Saute for 5 minutes.
  2. Add the ground turkey, black beans, cilantro, taco seasoning and water to the skillet. Cook and frequently stir until turkey is browned.
  3. Place equal portions of the romaine lettuce in the serving bowls.
  4. Top the lettuce with the turkey mixture. Garnish with avocado slices, green onions and shredded Monterey Jack cheese. Enjoy!
