Turkey Taco Salad

Ingredients:
1 tablespoon olive oil |
1 white onion, diced |
2 lb ground turkey |
1 can black beans, drained and rinsed, 15 oz. |
1/4 cup chopped cilantro |
2/3 cup taco seasoning |
2/3 cup water |
4 cups chopped romaine lettuce |
Avocado slices, for garnish |
Chopped green onions, for garnish |
Shredded Monterey Jack cheese, for garnish |
Directions:
- Pour the olive oil into a skillet. Bring to medium heat. Once hot, add the white onion. Saute for 5 minutes.
- Add the ground turkey, black beans, cilantro, taco seasoning and water to the skillet. Cook and frequently stir until turkey is browned.
- Place equal portions of the romaine lettuce in the serving bowls.
- Top the lettuce with the turkey mixture. Garnish with avocado slices, green onions and shredded Monterey Jack cheese. Enjoy!
