Bring a skillet to medium-high heat. Turn on panini press to warm up.
Cook for about 4 minutes on each side until they begin to brown. Transfer to a plate and sprinkle both sides with lemon pepper seasoning.
Spread vegan mayo over one side of each slice of bread. Layer cucumbers and avocado over the bottom slice, sprinkle with additional lemon pepper seasoning. Next layer on two slices of tomato and sliced purple onion. Top it with two slices of the seasoned grilled tofu, lettuce and second slice of bread.
Place two sandwiches in panini press and cook for about 5 minutes. Transfer sandwiches to a large plate and cover to keep warm while other sandwiches cook.

Tofu Panini Sandwich

Ingredients:
1 block extra firm tofu, 16 oz.
Avocado oil spray, for tofu
Lemon Pepper, to taste
Vegan mayonnaise
8 slices sourdough bread
2 tomatoes, sliced
1 avocado, sliced thin
1/4 purple onion, sliced thin
1/4 cucumber, sliced thin
1/2 head green leaf lettuce
