Combine pomegranate juice, honey, Dijon mustard, lemon juice, olive oil and pepper in a saucepan. Bring to a boil on high heat. Once boiling, reduce heat to low and simmer. Stirring frequently for about 2 minutes.

Autumn Pear Salad
Serves 4

1 Bartlett pear
3 cups mixed greens
1/3 cup pomegranate arils
2 tablespoons pomegranate juice
1/2 tablespoon honey
1 teaspoon Dijon mustard
