Jalapeno Peach Chicken Skewers

Ingredients:
15 wooden skewers, soaked in water for 30 minutes
2 lb boneless, skinless chicken breasts, cut into cubes
2 tablespoons extra virgin olive oil
1/2 teaspoon ground black pepper
1/2 teaspoon chili powder
1 teaspoon kosher salt
4 yellow peaches, quartered, then halved
3 jalapeno peppers, seeded, cut into chunks
For the Peach Glaze:
1 teaspoon soy sauce
1/5 cup peach preserves
1 teaspoon Dijon mustard
1/2 teaspoon minced garlic
1 teaspoon apple cider vinegar
1 tablespoon extra-virgin olive oil
1/8 teaspoon ground black pepper
1/8 teaspoon red pepper flakes
1/2 teaspoon kosher salt
Directions:
Place the chicken in a large mixing bowl. Add the olive oil, black pepper, chili powder, and salt. Toss until well coated.
Thread each skewer with peaches, chicken, jalapenos.
Bring the grill to medium-high heat. Arrange the skewers on the grill. Cook for 8-10 minutes per side.
Stir together the soy sauce, peach preserves, Dijon mustard, garlic, apple cider vinegar, olive oil, black pepper, red pepper flakes and salt in a medium saucepan. Bring to medium-low heat. Cook and stir until warmed through.
Brush the chicken skewers with a generous amount of peach glaze. Enjoy!
