Pomegranate Raspberry Chia Dessert

Ingredients:
For the Base: |
1 cup fresh raspberries |
1 tablespoon pomegranate juice |
1 tablespoon honey |
For the Chia Layer: |
1 cup unsweetened almond milk |
1/4 cup chia seeds |
1 tablespoon honey |
1/2 teaspoon vanilla extract |
For the Toppings: |
1/2 cup pomegranate arils |
Fresh raspberries |
Directions:
- Place the raspberries in a small mixing bowl. Pour in the honey and pomegranate juice. Mash together until combined.
- Spoon the raspberry mixture into the bottom of serving glasses. Set aside.
- In a separate mixing bowl, stir together the almond milk, chia seeds, honey, and vanilla extract. Allow to sit for 15 minutes.
- Pour the chia mixture on top of the raspberry mixture. Place the glasses in the refrigerator to chill for at least 2 hours.
- When ready to serve, top the chia mixture with fresh pomegranate arils and a few raspberries. Enjoy!
