Lemon Cream Chia Pudding
Serves 4
Ingredients:
For Chia Pudding:
1/4 cup chia seeds
2 tablespoons honey
1 cup almond milk
1/4 teaspoon vanilla extract
1/2 tablespoon lemon zest
1/4 teaspoon salt
For Lemon Cream:
2 tablespoons lemon juice
1/2 tablespoon lemon zest
1 1/2 cups full fat coconut cream
1/4 teaspoon turmeric
1/3 cup honey
Directions:
Add the chia seeds, honey, almond milk, vanilla extract, and lemon zest in a mixing bowl. Whisk until well combined.
Place the bowl in the refrigerator to chill for 2 hours, or overnight.
Add the lemon juice, lemon zest, coconut cream, turmeric, and honey to a blender. Place the lid on and pulse until creamy and smooth.
Divide the chia pudding between 4 bowls. Pour the lemon cream over top.
Place the bowls in the refrigerator to chill for 3 hours before serving.
