Apple Cinnamon Roasted Sweet Potatoes

A sweet side dish for Fall dinners.

Ingredients:

2 green apples, chopped
2 sweet potatoes, chopped
1 tablespoon olive oil
2 teaspoons ground cinnamon
2 tablespoons pure maple syrup

Directions:

  1. Preheat the oven to 400° F. Line a baking sheet with parchment paper.
  2. Place the green apples and sweet potatoes in a large mixing bowl. Drizzle olive oil over top. Then sprinkle the ground cinnamon. Toss to evenly coat the apples and sweet potatoes.
  3. Spread the green apples and sweet potatoes across the baking sheet.
  4. Place into the oven and bake for 25-30 minutes, until the green apples and sweet potatoes are tender.
  5. Transfer the green apples and sweet potatoes to a bowl. Drizzle the maple syrup over top.
  6. Spoon onto serving plates and enjoy!
