Feta and Tomato Stuffed Chicken

Ingredients:
4 boneless skinless chicken breasts
1 cup diced tomatoes
4 oz feta cheese
1 1/2 tablespoons minced fresh Italian parsley
2 teaspoons olive oil
Salt, to taste
Ground black pepper, to taste
4 tablespoons pesto
2 tablespoons vegetable oil
Directions:
Lay chicken breasts on the cutting board. Cut along the center lengthwise about halfway into the chicken breasts. Set aside.
Add the tomatoes, Feta cheese, Italian parsley and olive oil to a mixing bowl. Season with salt and pepper. Stir together until well combined.
Stuff each chicken breast with an equal amount of the tomato mixture. Rub each chicken breast with a tablespoon of pesto.
Pour the vegetable oil into a large pan and bring to medium heat. Once hot, place the stuffed chicken breasts in the pan. Cook until chicken is golden brown on both sides, about 20-30 minutes total cooking time.
