Hatch Chile Stuffed Chicken Breast

Ingredients:
2 boneless, skinless chicken breasts
4 oz cream cheese
1/2 cup grated sharp cheddar cheese
1 lb roasted chopped hatch chiles
Salt, to taste
Ground black pepper, to taste
Ground chipotle powder
1 tablespoon unsalted butter
Directions:
Preheat the oven to 425° F.
Cut a horizontal pocket in the center of both chicken breasts.
Combine the cream cheese, cheddar, and hatch chiles in a mixing bowl. Stir together until well combined. Season with salt and pepper, stir together.
Fill each chicken breast with the cream cheese mixture.
Season the top of the chicken breasts with salt, pepper and chipotle powder.
Place the butter in a skillet and bring to medium-high heat.
Once the butter has melted, place the chicken seasoned side down in and sear for 4-5 minutes, until golden brown. Season the chicken with salt, pepper and chipotle powder, in the pan, before flipping. Cook the other side for 4-5 minutes, until golden brown.
Transfer the skillet to the oven. Bake for 10 minutes.
Remove the skillet from the oven and let the chicken sit in the skillet for 5 minutes.
