Honey Lime Chicken Smothered Burritos

Ingredients:
1/3 cup honey
1/4 cup lime juice
1 tablespoon chili powder
6 cloves garlic, minced
1 whole rotisserie chicken, meat removed and shredded
2 cups packaged cilantro lime rice, cooked
1 can pinto beans, drained and warmed, 16 oz.
1 cup heavy cream
1 jar prepared Salsa Verde, 16 oz.
8 burrito-size flour tortillas, warmed
2 cups shredded Colby Jack cheese
2 cups shredded mozzarella cheese
Directions:
Combine the honey, lime juice, chili powder, and garlic in a mixing bowl. Add the chicken and toss to coat. Cover and place in the refrigerator for 30 minutes.
Preheat oven to 350° F.
Whisk together the heavy cream and Salsa Verde in a mixing bowl. Set aside.
Spoon the cilantro rice, pinto beans, and shredded chicken in the middle of each tortilla. Sprinkle Colby jack cheese over top. Fold in both ends and roll to close.
Arrange the burritos in a baking dish. Spoon the Salsa Verde sauce over top and sprinkle with mozzarella cheese.
Place in the oven to bake for 20-30 minutes.
Remove from the oven and place the burritos on serving plates. Enjoy!
