Garlic Lemon Veggie Linguini

Ingredients:
1 box linguini, 16 oz.
2 tablespoons olive oil
2 cloves garlic, minced
1 pint grape tomatoes
1 bag spinach, 5 oz.
2 tablespoons fresh lemon juice
1/4 cup grated parmesan, more for garnish
Salt, to taste
Ground black pepper, to taste
Directions:
Fill a pot with water and bring to a boil. Once boiling, place linguini into the water and cook until al dente. Drain water and set aside.
Pour olive oil into a large skillet and bring to medium-low heat. Add garlic and cook for 30 seconds, until aromatic. Add grape tomatoes, stir around to coat and cook for 3 minutes. Add the spinach to the skillet, stir and cook for 3 minutes. Add the cooked linguini to the skillet. Drizzle lemon juice over top and sprinkle on grated parmesan. Toss to coat.
Transfer to serving plates. Season with salt and pepper and enjoy!
