Chicken Cutlet (1 in cut) 2 cups, Sausage Cooked (casing remove) 1 cup, Vidalia onion (diced) 1 sm, Cannellini Beans 2 cans, Garlic Minced 1 clove, Spinach (chopped) 2 cups, Potatoes (1/2 in diced) 2 cups, Roasted Tomato (rough chop) ½ cup, Chicken Stock (hot) 1 qt, Butter ½ cups, Salt, Pepper To Taste
Procedure: In a large stockpot add 2 tbls of olive oil. Add chicken and sausage. Cook until done. Add onion and garlic,sauté until translucent. Add chicken stock, allow to boil. Add spinach and continue to simmer. In a separate pot, Add butter and cream. Allow to simmer until thick. Add cream mixture to soup and season with salt and pepper. Continue to simmer until thick. Add roasted tomato and cannellini beans. Let stand 15-20 mins. Serve hot.
