Rigatoni with Caramelized Onions & Baby Shrimp

Ingredients:

1 lb rigatoni pasta
1/2 cup olive oil
2 medium sweet onion, julienned
1/4 cup brown sugar
2 tablespoons butter
1/2 cup cherry tomatoes, halved
1/2 cup asparagus, steam cooked tips
1 bag baby shrimp, cooked
1/4 cup fresh parsley, chopped
Parmesan to taste
salt, pepper, red pepper seed to taste

Procedure:

Place the pasta in a large stockpot of salted boiling water and cook al’dente. Drain and hold aside. In a large saute pan, add 1 tablespoon of oil. Add the cut onion and saute until translucent. Add the butter and melt. Add the brown sugar and mix well, low heat. Add the steamed asparagus, baby shrimp, and cherry tomatoes. Add the pasta to the vegetables. Pour in the remaining olive oil and season with salt, pepper, and red pepper seed. Add the parsley and Parmesan. Serve hot.
