Ingredients: 2 fresh mozzarella balls, 2 cups flour, 6 large eggs, 2 cups seasoned panko bread crumbs, 2 cups Costa d’Oro Olive Oil, 1 quart marinara, fresh basil leaves
Cut the mozzarella balls into 1/2 inch thick slices. Place the flour in large bowl and in a separate bowl, break the eggs and beat. Spread the bread crumbs on a large plate. Coat the mozzarella slices one at a time, first in flour, then the beaten egg, allowing excess to drip off. Place the slices in the bread crumbs and press down gently. Repeat back into egg and bread crumbs, then place on the flat platter. Do not stack.
When all the mozzarella slices have been coated, place in freezer for 10-15 minutes in order for the mozzarella to become firm.Place half the oil in a fry pan and heat until ready to fry. Change oil when it becomes cloudy. Place the mozzarella slices in the pan and fry until they become golden, about a minute on each side. Place the slices on a paper towel.
Heat the marinara. To serve, coat the bottom of an appetizer plate with marinara the place 2 slices of mozzarella on the sauce. Garnish with basil leaves and serve hot. Serves 4
