Minestrone Soup

Ingredients:

1 1/2 pound ground beef
1 cup carrots, diced
1/2 cup onions, diced
1 cup celery, diced
1 can stewed tomatoes
1 lb elbow macaroni
2 quarts beef stock
1 tablespoon flour
2 cans kidney beans
oregano, basil to taste
salt, pepper, red pepper seed to taste

Procedure:

In a large stock pot, add onion, celery, and carrots. Add 1 tablespoon of oil and saute. Cover and sweat vegetables until tender. Add the ground beef, cover, and cook until the beef is done. Sprinkle flour over the meat and vegetables, mix well. Add the beef stock and allow to boil, reducing when thick. Add the pasta and cook until al’dente. Add the stewed tomatoes and red kidney beans. Turn off the heat and let stand for 10 minutes. Season and serve hot.
