Italian Rice Pie

Filling Ingredients:

3 cans crushed pineapple in heavy syrup, drained
5 eggs
2 (7.5 oz) shredded coconut
1/2 cup sugar
1 teaspoon vanilla extract
1 pound rice

Pie Ingredients:

3 eggs
1 stick butter, softened
1/2 cup sugar
1 teaspoon vanilla
1 3/4 teaspoon baking powder
flour as needed

Procedure for Pie Filling:

Cook the rice, cool., and hold aside. In a large bowl, add all other ingredients and mix well. Add in the rice and mix.

Procedure for the Dough:

In a large bowl, add the eggs, sugar, vanilla extract, and baking powder. Being adding flour a little at a time and mix until the flour does not stick to your hands. Form a smooth bowl and place on a floured table. Roll out the dough to fit a 9×13 pan. Place the dough in the pan and cut off the excess. Add the pie filling and bake at 350° for 20-25 minutes until the dough is golden.
