Fried Zucchini Flowers

20 Zucchini Flowers. Filling needs 1 lightly beaten jumbo egg, 1 cup fresh ricotta, 1 tbsp. finely diced shallots, 2 tbsp. finely diced fresh parsley, 1 tbsp. finely diced fresh basil, 1 tbsp. dried oregano, salt, pepper, thyme and sage to taste. The batter needs 1 cup of flour, 1 tbsp. sea salt, 3/4 cup of warm water and one jumbo egg. Mix all batter ingredients until smooth. Hold aside for 1 hour. Mix all stuffing ingredients until smooth. Remove stems from flowers. Place filling into pastry bag. Pipe filling into flower until it’s full. Dip each flower into batter. Pan fry until golden. Buon Appetito
