Fresh Strawberry Risotto

Ingredients:

2 cups Arborio rice
4 cups chicken stock, hot
1/4 cup Asiago cheese
2 tablespoons mascarpone cheese
2 tablespoons butter
1/4 cup fresh strawberries, sliced
1/4 cup pine nuts
1 tablespoon oil
1/4 cup shallots, diced
1/4 cups sauterne wine
salt and pepper to taste

Procedure:

In a large saute pan, combine the olive oil and the shallots and saute until translucent. Add the dry rice and mix well. Begin to add the hot chicken stock, one ladle at a time, stirring until the rice has absorbed most of the stock. Continue adding the chicken stock until the rice become tender, about 25 minutes. Add the Asiago cheese, the mascarpone cheese and the pine nuts. Mix well. In another saute pan, melt the butter, add the strawberries and cook for about 1-2 minutes, do not allow the strawberries to become soft. Combine the strawberries with the rice, mixing gently. Season with salt and pepper.
